Paleo Sweet Potato Eggs Benedict

Looking for Sunday brunch inspo? Look no further! Ok so maybe this isn’t technically a “benedict”, but it sure is just as delicious 😋. Sweet potato hash rounds, topped with bacon and a crispy fried egg. Poached eggs can be subbed for fried, but I think fried works just as well, and is less effort.
